My lovely hubby took his mum out for the day today whilst I was at work and he brought me back a piece of tart - it's got plum jam in the bottom of a sweet pastry case with a lavender madeira spongy filling topped with water icing and sprinkled with a few lavender flowers.

It's sweet but very good and I'm amazed at how the flavour of the lavender comes through. Oh and of course a big mug of tea to go with it.

A ham and cheese sandwich (or more ) with some sliced tomatoes- seasoned with olive oil or balsamic vinegar- on the side, as breakfast- or "in between meals"- dish and a big glass of sparkling mineral water (with or without ice cubes and lemon)

I eat between 1/2 and 1 pound of veggies a day, and most days part of that is a serving of legumes (such as black beans)--I definitely feel healthier when I do.

Right now, just indulged in my biggest food vice--a cookie. A McVitie's Digestive Biscuit to be exact. Only a chocolate covered one could be more yummy

Free of Nitrates and a very low pH makes it really clear, pure and has an almost "crispness" about it.

Leftovers from Max's deli-- the last of my sandwich, a #3 Dr. Mike Cala "World's Best Dentist": Corned beef, pastrami, liver and hot grilled onions with chopped hard boiled eggs on rye.

And because I just finished a good workout at the gym, I'm having a tall glass of coke with it. Ah, sugary good indulgence!

Take out from a Thai restaurant-- tom kha pak and green curry eggplant. Mango sticky rice for dessert. I loooove mango sticky rice. Given enough, I'd explode like Mr. Creosote before I stopped eating. After the soup and entree are put in the fridge for later, and I'm really absolutely stuffed, I can't help but dive into the mango sticky rice. I start eating, and I keep eating until every bit is gone. Man, I feel like a PIG right now!

This is what I prepared for lunch today and how I prepared it:

Main dish:

Take a little less than half a pound of wild Alaskan Salmon Fillet (preferably cut from the top end and not the tail end of the fish)

Place the salmon fillet skin down in a glass Pyrex bowl with a lid.

Drizzle over the salmon fillet the following:

2 tablespoons of Rice Wine Vinegar
1 tablespoon of Soy Sauce
2 teaspoon of Toasted Sesame Seed Oil
Enough Thai Sweet Chili Sauce to generously cover the entire fillet


Microwave on high for 3 minutes.
Remove Pyrex bowl from the microwave and spoon sauce over entire fillet
Microwave for a further 2 minutes

Transfer fillet to plate
Spoon sauce over the entire fillet
Break up the fillet and remove the skin
Mix flaked salmon fillet with the sauce and serve

Side dish:

Two small-to-medium red potatoes washed thoroughly. Don't peel the skin.
Cut the potatoes up into 1/2 inch cubes.
One generous handful of (French Haricot) green beans cut in half
One medium white onion. Cut into quarters and cut each quarter into thirds.


Add the potatoes and the green beans into a steamer and steam for 3 minutes (while the salmon is being microwaved). Add the diced onion and steam all the vegetables together for a further two to three minutes or until the potatoes are done.

Transfer the steamed vegetables immediately into a bowl and add two tablespoons of the best quality Extra Virgin Olive Oil you can find. My preference is for Spanish Olive Oils, or, you if can find it, a Tunisian Olive Oil.

Squeeze the juice of medium sized lemon over the vegetables.

Sprinkle about a half teaspoon of salt over the vegetables.

Grind fresh black peppercorns (preferably of the Tellicherry variety) using a pepper mill over the entire surface area of the vegetables, mix thoroughly and serve (on a separate plate) with the salmon.

My cold drink of choice at the end of the day for the last couple of years has been Bundaberg Ginger Beer (imported from Australia) but a few weeks ago I discovered an amazing 'happy hour aperitif' style soft drink called Il Vero CHINOTTO from a company called Lurisia in Italy. We have plenty of freshly squeezed tropical fruit juice options here but b* all in the way of options for soft drinks - this one is great. I'm sure Europe has plenty more where this came from - might be time to start an import firm . . . it's the Hong Kong way, you know

Happy to oblige Haunani. I have found microwaving is the best and most fuss free way to cook salmon. You will be so impressed with how moist and tasty the fish comes out. If you have a really thick piece of salmon perhaps 6 minutes would work, but I have usually found 5 minutes is about perfect for most fillets. An added benefit of microwaving fish is that it destroys very little of the Omega 3 fatty acids. Grilling fish is the worse form of cooking in this regard, microwaving the best. Baking falls somewhere in the middle. Let me know how your husband likes it.

Glad you like my preparation mr. reasonable.

Nothing at the moment, but I have a mixed fruit cobbler in the oven (peaches, raspberries and blueberries) for dessert. Dinner will be grilled Italian sausages and peppers, a beautiful round loaf of crusty bread - I'm telling you beautiful breads can make me cry - all washed down with a jammy juicy Spanish garnacha. (Yum, yum! I feel like Grandpa on Hee Haw).

No, I'm merely an adequate cook. I cheat and buy the nicest ingredients I can find and let them speak for themselves. If it's a dinner party or a multi-course meal, I get stressed.

Ah but Lillybelle- the best chefs always buy the nicest ingredients- I think it's part of being a good cook . I try my best - having spent a long time in the UK - I learnt to make a number of british meals - like boiled gammon, meat pies, yorkshire pudding etc - all from Delia Smith's humungous cookbook and from some good friends' mothers and fathers !
I also used to watch the Food Channel but that is seriously bad for the waistline ! *LOL*
Right now ,my tummy is empty except for water- I'm off to the gym and I don't eat till I get home. Sounds bad but it does train your system to use the 'reserves' !! ( on my thighs )
