Lime

Lime, Mexico - The bitterest citrus note in my collection, lime is not my favorite aroma. However, it has a strong presence and better longevity than some of the other citrus peel notes. I think this ingredient would best paired with a sweet base. In fact, I think I would change my mind altogether if I found the right base for it. I wonder which one...

Note that the different extraction methods produce significantly different aromas when it comes to lime.

The cold pressed oil is more traditionally lime-like. Bittersweet with a green limey nuance.

The steam distilled is clearer, and almost has a metallic aroma to it. It smells closer to the aroma of lemon lime flavored soda - with a tartness more reminiscent of the peel (along with lemon peel) rather than the juice.

I find it to be less caustic than others in the same class.
