Chocolate Mousse???

My sweetheart wants chocolate mousse for his Valentine's dessert, and I've only made it once, four years ago and unsuccessfully. Does anyone have any favorite recipes/tips to share? He mentioned something about a white/dark combo, but I'm open to anything!

Ooh! I love Chocolate mousse!

Something I saw once on a Nigella Lawson show rocked my world... we tried this once and it was SUPERB!

1.5 cups mini marshmallows
4 tbsp soft butter
9oz best quality semi-sweet chocolate (chopped into small pieces)
1/4 cup hot water from recently boiled kettle
1 cup heavy cream
1 tsp vanilla extract

1. Put the marshmallows, butter, chocolate and water in a heavy-bottomed saucepan.

2. Put the saucepan on the stove on a fairly gentle heat to melt, stirring every now and then. remove from heat.

3. Meanwhile, whip the cream with the vanilla until thick and then fold into the cooling chocolate mixture until the mixture is smooth and cohesive.

4. Pour/scrape into 4 glasses or small dishes, about 3/4 cup capacity, and chill until you want to eat.

Seriously... it doesnt get better than this! Its rich, velvety and delicious!

Dimitri! Thank you so much, I'm really stoked you responded! Judging by your pics, anything that comes out of your family's kitchen will be delish. This looks relatively simple, too.

Do you have a counter top mixer? Kitchen Aid and the like. If so I'll see if I can get a recipe from my girlfriend. She's a pastry chef and whips things like this out of thin air.

Thanks Sunny... this is an absolutely fool-proof recipe and takes under 10 minutes to prepare. The marshmallows give it that additional oomph! I hope you give it a shot, and if you do, please let me know how you get on

Docman, thanks. I don't have a countertop mixer, though; I've never been much of a baker. Lucky you, with all that access to fabulous delectables!

Dimitri, yours is it! I've got my shopping list all made out. I think I'll garnish it with chocolate shavings and a strawberry. Maybe a mint leaf, too.

Sounds fab Sunny! Or maybe you can scatter a few mini white choc chips over the top with that strawberry - being as hubby had hoped for a dark/white chocolate mix.

Oooh! Im jealous! Enjoy!

The mousse was a slam-dunk. Soooo good! Perfectly rich and mousse-y! I ended up garnishing it only with chocolate shavings. This would be seriously delicious in white chocolate, though, and now that I know how easy it is, I can play around with layering. I'll def be making this one again, Dimitri, thank you so much!

Great! Im really happy it worked out for you Sunny!
Its extremely simple, and I have a hankering for some right now! If there weren't 40 cms of snow outside I'd probably walk to the shop... my waistline is grateful.
