cool water... GIT of course
ck one... bulgari eau parfumee au the vert (as described by luca turin in the guide)
burberry weekend... caswell massey no.6? (from the reviews)
polo sport extreme... lv piper nigrum (hey they're both peppery)
clinique happy... one of the eau d orange vertes? terre de hermes?
l'eau par kenzo... ok i'm kinda lost with this one... hmm... lemony aquatic... chlorine...

i'd love to hear your grown up versions for these 6 scents and your own transitions if any

I don't understand. Those six fragrances are marketed to adult males.

By "grown up" do you mean more niche or more expensive?

CK one - SMW, Montale Bois Fruite. Xerjoff Mefisto
Polo Sport Extreme - Opus 1870 / Frank Los Angeles
Clinique Happy - Concentre D'Orange Verte
L'Eau Par Kenzo - Erolfa / Serge L'Eau / Bvlgari Aqva

What you're trying to do, is essentially what I've done with all my teenage favorites, finding (either inadvertently or purposefully) scents with similar notes or that hit similar cravings:

Cool Water - GIT
Polo Sport - Erolfa / Millesime Imperial / M7 Fresh
Hugo - L'Anarchiste / Cereus #4 (apple fix)
Jovan Ginseng NRG - M7 Fresh
CK One - SMW
Swiss Army - Green Valley
4711 - Pour Le Jeune Homme, Extra Vieille
Bowling Green - Eau Di Campagne, Original Vetiver, Bombay Sapphire Infusion, Selection Verte

And nothing really comes close to LEau par Kenzo...it's still the best "chlorine aquatic" around, at any price.

I do to, and I'm in my mid-thirties. BUT, if you really want a more refined take on the similar lemon (yuzu) theme, check out Chanel Allure Homme Edition Blanche. Great fragrance.

The current Shalimar EDT is basically a grown-up baby powder. Or were you not looking for fragrances that young? :P
