I enjoyed reading Perfume, the Art and Science of Scent by Cathy Newman. A good historical overview. Admittedly, there aren't too many of these to choose from, at least that I've found.
Of course, you can read Michael Edwards' stuff if you can lay down some serious cash, but probably no more than buying one really pricey niche frag!
I also read Emperor of Scent, which is Chandler Burr's book about Luca Turin's science-of-smell exploits. Quite a few perfume thoughts as well. Pretty heavy on the science, though a good read. Nowadays supposedly others have superceded Turin's theories.
I'm intrigued by Perfume, the Story of a Murderer, which is apparently a historical mystery, pretty dark, I hear.
