    I would check out:

Serge Lutens: Fumerie Turque (most others)
Creed: Vintage Tabarome (recently made exclusive)
    Caron: most
    Guerlain: most

This should be a great trip for you!

Check out the city threads on basenotes and maybe the bigger blogs ( nowsmellthis) for good & fragrant shopping recommendations in paris.
But once you get locked into a serious perfume collection, the tendency is to push it as far as you can.

I'd stop at Creed, absolutely. Not only do they have the entire Private Collection there but they have a number of boutique exclusives that are available only (I believe) in flacons.

Not to mention some collector stuff like the special/limited edition atomizers, and even high-end clothing apparently!

L'Artisan is another one to check out, and I think the prices are more reasonable there.

My first thought was Serge Lutens Fumerie Turque as well. It might not be to your liking (as unimaginable as that seems to its fans), but many of Serge Lutens' scents are non-export, so you won't find them at Barney's, Neiman Marcus, or your specialty shops here in the U.S. Bon voyage!
Eddie: Sweetie, what are you drinking?
Patsy: Oh, this? Chanel No. 5.
