I don't think I've tried enough to qualify for knowing the "ultimate" incense/wood scent, but a couple I think are definitely worth trying:
L'Artisan Passage d'Enfer - like walking into a Chinatown antique store. The distinct smell of antique rosewood/teak furniture mingling with medicinal Chinese herbs and a pinch of liquor and that smell of a place where incense has been burned daily for years.
L'Artisan Aedes de Venustas - woody incense with a gourmand twist. Imagine what you're describing, but with a shot of British sticky cake in the middle. Perfect for the holidays, which is why I'd bring it up.
I also finally just smelled Heeley Cardinan, which is technically Roman incense and woods, but really surprised me with how much I liked it.
