As much as I do not like the scent, it seems Dior Homme is one
another would be TdH and to a lesser extent, Rive Gauche
as for Niche there are quite a few including Black Aoud, Le Labo Rose, LDDM, MPG Santal Noble, Chergui, and Musc Ravageur to name a few

I can't imagine any niche scent becoming a classic. Don't you have to know of its existence for it to be considered a classic?
Vulcan- my thoughts exactly!! It you have to go to Barney's (if not Europe) to get it you're not talking about a potential classic. Maybe Marc Jacobs Bang! will be the first?!
I would say Timbuktu.
many of the scents mentioned here may at best be future gems in my opinion, where a comparatively small number people would wear them and talk about them passionately, possibly more so than now. I agree with vulcan and dreamer in the definition of classic.
armani code seems to be today's top hit, but I doubt it will live up to be a classic. gio on the other hand I think will deservingly be so.
my pick would be bulgari aqua.
+1 TdH and London. Prior to reading the comments I thought of those 2 immediately as well as Grey Vetiver.
I think if you want to determine what a post 2000 classic might be, you'd have to get a woman's opinion. Lets be realistic, the vast majority of guys wearing frags are going to wear something they know women respond to.
In my opinion, I'd give the nod to D&G The One at this very moment. It's already very popular, Heavily advertised, & widely available.
Chanel Allure Homme Sport and YSL L'Homme are two more I could see staying very popular.
... then again, there are "decade classics" and "timeless classics"... I would add Iris Nobile ADP, although it is arguably more feminine
