I cannot think of anything exactly like this, but:
For fizzy, fresh champagne I'd say the standard is Kenzo Flower (it doesn't have much moss/amber drydown though), which, according to Luca Turin, is the reincarnation of the old Royal Bain de Caron, now disfigured by reformulations.
Two excellent things that move from fruity-citrusy to floral, with a fizzy/fuzzy aspect, to more ambery mossy drydowns are 31 rue Cambon by Chanel and Promesse de l'Aube by Parfums MDCI.
If you are willing to toss chocolate and much tangerine sweetness in the mix, Missoni also satisfies most requirements.
