Tobacco Vanille -- I wore it to work today, and it pretty much destroyed the Allure Homme Sport's and La Nuit de L'Homme's that most stock traders wear where I work.
I'm pleased with everything in my wardrobe. However, the one to rule them all is Aramis.
If I had one mood then maybe I would have one favorite scent. Unfortunately I have many moods and alter personalities so i have many favorites.

But I can't exactly afford too many niche frags, so to satisfy my craving I'll follow up that answer with A*Men's Pure Havane.
I don't care what anybody says, Acqua Di Gio is my all time favorite cologne. Played out or not, it was my first really good cologne and it brings back so many good memories. A lot of girls have told me that I smelled great when I wore it. It's the only cologne I've had to buy another bottle of b/c I finished it. It can be worn anytime, anywhere. It projects well and lasts a good amount of time. For me, nothing beats wearing a button down shirt, nice jeans and shoes, and a few sprays of ADG before a night on the town, especially since I lived in Hawaii when I bought it

If I only have to choose one cologne from my colection it would be Fahrenheit dior.
But because It has been reformulated, my favorite that still in production cologne is: terre d'hermes Hermes.

FYI, the batch no. is A3310K02. It's a 2010 bottle that is relatively heavy on the iris note, has noticeable sea breeze and ambergris notes, and it is relatively lighter on the fruit notes. This batch of Creed MI is easily wearable to a professional job (where as other batches may be too fruity smelling).
Tom Ford Extreme if I had to choose one though I have many more.
All time favorite, Le Male - JPG. However, the closest I have come to dethoning it has been Creeds Aventus. Honorable mentions to go La Nuit L'Homme, Fahrenheit, and Versace Dreamer.
The hunt for a Signature Fragrance is not an easy one! I see the light at the end of the tunnel! Edit: 2015... I've given up and given in

Guerlain Homme is still my favorite. I finished one bottle and am currently working on my second. I could wear this for any occasion, at any time and be happy. Cartier Roadster is a very close second, however, and is my most worn scent in the last couple of months.
I don't play favorites with my children.
Yesterday it was Grey Vetiver, today Green Irish Tweed, tomorrow it might be Acqua di Parma Colonia, then Tobacco Vanille, Egoiste, Villoresi Uomo and so on...
As said, depends on my mood and situation which cologne is my favorite at the moment.

man I've jumped around so much I'm a fragrance man-whore. Proud of it too. It's the reason why I love this hobby. The winter chill has recently set upon my region and the fragrances have taken on another dimension (for example Royal Oud and Antaeus smell so much better in the cold!)
Today's favorite is Antaues, last month was Aventus, month before that it was GIT, next month I have a feeling it will be TDH. She's been winking at me lately.

I am still pretty blown away by VC&A PH. And better yet, it can be had for only $20-30.
Currently I would say vintage Le 3me Homme but my vintage Van Cleef & Arples pour Homme just keeps calling my name.
I don't have a signature fragrance. My signature changes a little bit every day, why shouldn't my fragrance?
