I suppose you can call Eternity a classic for the younger generation
Chanel Pour Monsieur
Dior Eau Sauvage
Polo Green
I would suggest that the most classic is a toss up between Old Spice and Pinaud Clubmen, and English Leather. I have used them all at one time or another, mainly from my dad's fragrance collection. Would not care for any today but I do regard them as men's classics.

Is the juice worth the squeeze?
Clubman by Pinaud
Zizanie by Fragonard
and...
Monsieur de Givenchy (Vintage)
A point to note - I still wear and very much enjoy all three (although Clubman and Zizanie mostly at home). Monsieur de Givenchy, to my nose, is the most "classic" smelling of the wonderful realm of Aromatic Citrus scents...yet, one of my dear favorites.
Great lists and scents noted by so many. And, by the way, "classic" does not mean "dated" to me at all.
Cheers.

“Some perfumes are as fragrant as an infant’s flesh, sweet as an oboe’s cry, and greener than the spring; While others are triumphant, decadent or rich; Having the expansion of infinite things, like ambergris and musk, benzoin and frankincense, which sing the transports of the mind and every sense.”

Azzaro, Canoé, Old Spice, Pinaud's Clubman, Brut, Chanel pour Monsieur, Eau Sauvage, Monsieur de Givenchy, Monsieur Worth, Pour Un Homme, Guerlain Vetiver, Vetiver de Givenchy, Zizanie, Royal Copenhagen Musk, Pierre Cardin / Creed's Bois de Portugal...
As to Tiffany / Chanel pour Monsieur Concentree, Habit Rouge, Equipage... I find them dated albeit enjoyable.
Rive Gauche and Bois du Portugal are classic smelling. Just enough old school and new.
+1, Bois du Portugal. I adore the fragrance. Classic, refined, gentlemanly.
Chypres with a nice leather note smell the most classic and classy to me.
E.g. Bel Ami, Derby, Aramis, Polo
My top 5: Sea Mist; Minnow; Crab, tiger, and almonds; Semprini; Rancid Polecat N° 2
When I think "classic," I think of Tiffany for Men.
It just smells like a fantastic cologne I would have encountered in the 1960s-70s, even though it's not of that vintage.
Current Top Five:
1. Creed Green Irish Tweed
2. Tom Ford Neroli Portofino
3. Hermes Concentre d'Orange Verte
4. Bond No. 9 New Haarlem
5. Creed Original Vetiver
