In my younger days, I tended to follow the established patterns with gourmands and aquatic, but as I progress in age, the strangest scent choices turn out to be appropriate for dating (at least, according to the fragrance tastes of the dates).
I guess it all depends on the day/night and activity
Dior Homme Intense - casual night/drinks
Frederic Malle L'eau D'hiver (my new found love!) - nights with close encounters
Creed Aventus - almost any day
LIDGE - a night after a formal event
Creed MI/GIT - a safe bet

i don't wear anything on a date because cologne is so cliche on a date. the woman can flat out smell the desperation off of you. the last time i was on a date, i wore cool water, and even then i gently wiped it off with my neck with a rag because i wanted to be nuetral.
But if I were to suggest a date night fragrance, go with something light and pleasant. Like maybe Millesime Imperial.
I know men on basenotes say women really love the super-manly powerhouses, but many women IRL think they're gross.
But really, wear whatever makes you feel good on a date. Just not too much of it though.
