GIT and L'Homme are my swiss army knives, Invasion Barbare would be as well if it wasn't such a pricey devil. As it is, I ration the use of IB. I seem to reach for Dior Homme Sport a lot, so I guess that's worth a mention. I bought Bleu thinking that it'd be a good swiss army knife type frag but it hasn't played out like that; I just don't reach for it. Maybe I need to put it closer to the front, lolz. Gucci Envy strikes me as a good one to mention here as well. I don't own TdH (gasp!), but I recognize it's versatility.

"Swiss army knife fragrance", to me, is one that can be turned to to wear for a nonspecific happening, a knock around scent, if you will. Hence, good choices would be:
warmer weather - Infusion d'Homme by Prada
cooler weather - Prada Amber pour Homme
For me Terre d'Hermès Pure Parfum. I also could imagine Azzaro pour Homme in that role.
Terre d' Hermes for me too. The EdT is good in all seasons (although some slightly better than others) and is my 'go to' fragrance. I have the Parfum also which is a bit more classy, especially in cooler weather.
Terre D'Hermes and Green Irish Tweed both come to mind (more the latter though).
I'm with Dollars&Scents on Prada Infusion D'Homme - or possibly Infusion D'Vetiver (dear GOD I love both - and need to pick them up asap. I'm going to use them as beaters - my everyday go-to-perfumes).
I'd also add Green Irish Tweed or possibly Original Vetiver.
I think Terre D'Hermes is pretty versatile.

To me Heritage strikes a great balance between inoffensive and interesting, familiar and distinctive, whatever poles you want to name. It works if applied heavy or light, and in all kinds of weather and it isn't popular enough that anyone has any strong associations or preconceptions of what time period it is from or what kind of person wears it.
Another super versatile fragrance that I think is terribly underrated is Gendarme V. To me, it's fresh and clean, but with a sexy undercurrent that sets it apart.

Helmut Lang Cuiron (although I ration its use since it is discontinued and I only have a limited supply)

I cannot imagine a scenario when Original Vetiver would ever be unsuitable.
