I don't believe in breaking them up by seasons or by notes for the most part, but I do sort them my own way. My tastes are a bit less sophisticated/complex than many here, but maybe more "functional"

Smell great in the office, out with the guys, casual date: Dior Homme Sport, 2008 or 2012, best of the sport genre and incredibly versatile, 2008 being a bit lighter and sportier, 2012 being a bit more romantic

Spring: Aventus. It says, "Yeah, the heavy days of winter are over but I'm still a force to contend with." It's a great transition from the heavier winder scents to the fresh and light summer selections. Honorable mention: Bleu de Chanel or Dior Homme Eau (which, the more I wear, the more I enjoy).
Summer: it's a tie! Le Labo Bergamote 22 or Chanel Allure Homme Sport Cologne. The AHS cologne is rapidly becoming my go-to Chanel. After a shower at the gym, it's simply perfect.
Fall: Hello, Dior Homme Intense! Welcome back to the rotation. Honorable mention: L'Instant de Guerlain.

First, I think it's important to determine how you wish to categorize. Some would say by season, some perhaps by occasion, while I would do so by accord genre (can't recall technical term anymore)...
1. Aquatic: Agua de Loewe El
2. Woody: Lalique Encre Noire
3. Spicy: Dior Aqua Fahrenheit
4. Floral: Salvatore Ferragamo PH
5. Citric: Roger & Gallet Open
After all these years around this hobby, I realized I like lavander, vetiver and patch, that I regard longevity and sillage - wise scents as off puting and that inexpernsive options can be well complimented.
Based on these facts, if I'd have to choose only five scents, these would be my options:
Lavander: Caron´s Pour Un Homme or lavander water from a local high-end haberdasher (James Smart's Leslie).
Vetiver: Guerlain's. Vintage Carven's is better, but discontinued.
Patch: any good quality patch oil or Givenchy Gentleman or Coromandel or Fueguia's Caoba or Fueguia's Otro Poema de los Dones - in all cases, applied very lightly.
Tradtional Eau de Cologne or Eau de Cologne-like scents: Dior's Eau Sauvage or Monsieur de Givenchy or Chanel pour Monsieur or "Colonia Tradicional Inglesa" (Traditional English Style Eau de Cologne) from a high-end haberdasher.
