Eau des Baux By L`Occitane
I'm on the market for a winter-ish fragrance that is relatively standard or low-profile, by which I mean something I can wear for "just whenever" that isn't terribly novel or "nose-catching." My favrites are Creed's Windsor, Seleccion Verte, and Royal Oud, but sometimes these can have a bit too much flash, plus I'd hate to overuse them. Dior's Eau Savage works well, too, but I'm not sure it's really doing it for me this winter. Any suggestions for something that might fit the bill for a late-twenties fella?

There are several possibilities.
Seeing as you like Creed, have you tried Green Irish Tweed? For me, it works all year and is great for winter.
I tend to go for warmer fragrances in the winter, and I'm really considering buying a bottle of Creeds Original Santal as well. It's warm and spicy, but a tad more relaxed and less punchy than Royal Oud (which I both have and love, but agree with you on the flash part).
Other than that you have Burberry London, or Bond No 9 - New Harlem (loads of coffee, syrup and some vanilla). Others include Dior Homme Intense (warm and smooth), Hermes Tonka Vetiver and Eau Savage Perfume (the new-ish dark green bottle with a sweet vetiver mixed with myrrh.
My five cents - I assume loads of other people will chime in with great suggestions as wellStay tuned.

Since you like Creed, you may want to consider the wonderfully red Original Santal. And I agree with so many others about Burberry London (warm and leathery) and Habit Rouge (warm and spicy) which are two of my all time fave frags.
Burberry London is definitely one.
Code by Armani may also fit the bill

While you are checking out London, do yourself a favor and try Azzaro pour Homme. It's worth far more than you will pay for it.
Both Burberry London and Baie de Genievre are perfect winter scents. Van Cleef & Arples pour Homme is excellent as well. If you can't find the vintage, the latest version, in the all black box, is very good.
I don't have a signature fragrance. My signature changes a little bit every day, why shouldn't my fragrance?
I would go with Derby. Great for all seasons, really.

There's really nothing better than Dior Homme Intense if you don't have it already. It's arguably the #1 based winter fragrance out there.
Others would be Aventus, Burberry London(typical fall/winter holiday fragrance that you wear with an ugly sweater), La Nuit de l'homme, Midnight in Paris, Tobacco Vanille, Musc Ravageur and so on
All stupendous fragrances and ones you will most definitely appreciate and receive compliments on.
