Dior Homme Intense
Vanilla and caramel are my two favorite notes in fragrances. I would love if those two notes were to be found in a fragrance suited for the warmer weathers (15 Celsius and up)

chanel allure edition blanche has a lot of vanilla in the base
I'm thinking about frags where these notes are paired to fresh notes like lavender and herbs. One example is the classic Caron pour un homme, lavender vanilla in perfect equilibrium. Caramel is more difficult, but Dior Eau Noire is an immortelle (hence the caramel) with a licorice-lavender top; the drydown is rather sweet, though.

Oh and Atelier Vanille Insensee. Can't see this not being the perfect vanilla for summer.

Vanille Aoud by M.Micallef. The aoud is very very subtle.
I find it light enough for warm weather and it's above 27 Celsius here most of the time.

Serge Lutens Un Bois Vanille is a nice caramelly vanilla with a little spice.
The only fragrance that reminds me of caramel is Body Kouros. I prefer wearing it in colder weather though.
New Haarlem works well in the warm weather.
