I've always intuitively grabbed whatever seemed right for the day, but recently, it seems like the decision is harder to make (probably because I've acquired too many scents)
I've taken to scrolling down the SOTD list and applying the first fragrance that someone else is wearing that is also in my wardrobe.
I have exceptions though, for instance, a couple times, my random method hit on Eau Sauvage, which I reserve for Wednesday night bowling.

I have 3 categories: stepping out, chilling out, wildcard.
Stepping out - a night on the town, out of town, event scent
Chilling out - staying in, running errands, family time
Wildcard - testing a sample, in-store spray, seasonal test
The main thing for me is to not kill the novelty of the scents I like the most.
Unless I'm doing planned testing, and sometimes even then, it's in the moment. Really, I've been in this game so long that it doesn't take much thought. From my collection I know what works in various situations and climate. That's basically all subconscious. I walk up and look at what I got, then grab and go.
I operate with a 'smaller' collection then many but love them all so it's normally not too difficult a decision
Influences include the weather outside and how I'm dressed for the day..
Mood and weather.
I LITERALLY choose it randomly. I have all my fragrances in a spreadsheet. I go to random.org and put the number of fragrances I have in the box and hit the button. Whichever number comes up, the fragrance that is in that numbered row is what I wear...unless it is a special occasion or date I may just pick one myself that will work for the situation.

2. Get them both. You're a Basenoter and you know you're going to end up purchasing them both eventually.

As I like them all, I rotate them and check my wardrobe to use the one that is due next in the rotation, usually one that I haven't used at least for 90 days.

Usually, I go with whatever I feel like wearing.
I choose based heavily on weather. I have three designations- cold, warm, and versatile fragrances. Then I choose from those based on my activity and how I'm dressing, certain colors just dont go with certain colognes. Like ADQ Profumo doesn't go with light blue or white or yellow, it's to dark and incense heavy to not wear with with dark brooding colors, just like I wouldn't wear Versace Eau Fraiche with black jeans and gray shirt, but I would wear it with light blue shirt or a light gray with lots of white. If I'm wearing light wash jeans and a ratty tshirt with dirty tennis shoes working around the house I might wear Sung Homme cause it just fits. Sounds a bit OCD, but it's really not. I make all these choices subconsciously most of the time because I learn my scents and how they behave very well.

Mostly with no other criteria than occasion (more formal or more casual), weather and the direct, immediate longing to simply wear a certain scent-especially if it has been a while after its latest wear
Mood dictates, but that's informed by whether I'm scenting up for work or play, the weather, and there's definitely a bottles-on-front-shelf bias.

After you get to KNOW all of your fragrances, the choice is akin to what food you want to eat that day (of course bearing in mind the occasion). The previous day I might've made the conscious decision to sport some Prada L'homme to Walmart but, upon awakening, I have this irresistible urge to want to SMELL like Jubilation XXV simply because I'm craving it. Happens all the time! I know I haven't paid enough attention to beautiful Egoiste but some other smell craving keeps jumping to the forefront on any given day. It's just like choosing....and changing your mind...about the meal you'd like to consume. Now, beautiful Egoiste is indeed in my reverie but it will happen when the craving for it PREVAILS! Maybe tomorrow!
