I've had similar problems with Virgin Island Water. I loved the fun piñacolada opening, but then it went cheap, super sweet coconut body wash on me, a shame!

However, there are many great suggestions here for you to scratch your itch. I would personally recommend:

    - Bronze Goddess - coconutty, expensive suntan lotion
    - Terracotta - heady, beauty white flowers
    - Moon Bloom - heady, coconutty white flowers

To the excellent suggestions above I’ll add Parfums de Nicolai Just Un Reve, Lolita Lempicka Elle L’aime, Estée Lauder Sensuous Nude.

Big ditto on the Fleurs de Sel.

And if your idea of "beach" is more Amalfi Coast and less Miami, my very favorite in this category is Azzuro di Capri by Bruno Acampora. It's got your citrus needs covered, and after that it smells like pure Italian seaside.

A couple fantastical aquatics that work for both women and men are:

Falling Into the Sea by Imaginary Authors

    Wave Musk by Mancera

Both are sea-like aquatics but more likely out of a dream or fantasy-land than any real marine location. I think you might like Falling Into the Sea in particular.

Here's a review I wrote for it many moons ago:

Falling Into the Sea opens with a big litchi note--juicy and robust. If you've never smelled litchi before, it kind of falls somewhere between pear, apricot, and peach. The litchi is backed by exotic flowers along the lines of mimose and lotus. As a result, this fragrance has a very tropical feel, and perhaps to call it a "tropical aquatic" is most appropriate. While I never detect a specific "sand" note, there is definitely a salty, beach-like quality that emerges about 20 minutes in to complete the picture. What you're left with is something of a fantastical impression of a tropical beach--a place close to one's imagination though somewhat displaced from reality. This works because for the most part the ingredients used in Falling Into the Sea feel natural enough to permit such an imaginative leap--your impression isn't jarred by harsh synthetics or scratchy aroma chemicals that remind you immediately that what you're smelling is fake. Yes, the notes are somewhat fantastical, but they are not so much chemical. In turn, the ingredients allow space for your mind to wander. To that extent, I think this fragrance is a success.

As the fragrance hits the one hour mark, the litchi subsides to a degree and the florals become more apparent.

Although labeled as unisex, I'm more inclined to consider this a feminine fragrance. The exotic florals and big litchi note just seem better suited for a woman to wear. Though I don't mind smelling it on my arm at the moment, I probably wouldn't feel completely comfortable wearing this out in public. However, for women, I think this is a viable option in this category and definitely worth exploring.

Projection is quite powerful and longevity is solid.

Another one not mentioned that might work well - Cuir Caraibes

This scent isn't what I would wear to the beach...instead it takes me to the beach whenever I smell it. I swear it has such specific salt and spice notes that it feels like I am on the shore of the Mediterranean. It's that specific. And uniquely...there is a roasted chestnut vendor on the beach. I love it and it's so unusual too: Profumo e Gusto in Libertà : CAaastagna_saalaaata (2017)

Lol I found F*ing Fabulous to be a huge disappointment really, but I will definitely check this one out if I can track a sample down. Thank you!

No one has said Albatross by House of Martriarch yet. Not the same sweet/sunny/coconut as some of the offerings above, more like the windy, salty wood dock on a cold Pacific Northwest beach. Different but it definitely takes you there and I enjoyed it a lot when I had it.

Not quite the beach, but an enjoyable scent nonetheless.
