Well, I have wanted to like Chergui but I had the first iteration and it was heaven, more hay than there is now. The newer versions pale in my mind's eye and also do not project as well. MFK Absolue pour le Soir, too beastly on me, as far as projection and the animal note.
I want something sweet, like honey, but not powdery/vanilla or too much cocoa. Black Orchid, too floral on me. I prefer the spices in say Red Vetiver, or a cinnamon or a nutmeg, or even the spices in Lubin's Idole edt years ago. Love projection and longevity. I do not want black pepper as in Piper Nigrum (and it was not what it once was) but I did like the Molton Brown Black Pepper recharge bath gel years ago. I see some scents have a pink peppercorn listed but I do not know that I have smelt that.
I tried some of the Killian scents, like Back to Heaven, etc., and they, well, I liked them but not enough to keep one (i had like Straight to Heaven and sold it).
I have Coromandel (straight up patchouli on me) and Antaeus which smell good on me, and I am thinking a honey/spicy scent is what I need, or maybe honey/tobacco/spice.
Boozy and honey or boozy and tobacco, like the vintage Havana, I don't know. I might venture that far.

Read about Montale Honey Aoud. Has leather and I don't do leather well. Givenchy Gentleman, again, what it used to be compared to now, i will have to pass. Now the Kouros, I loved that in the early 80's. May have to revisit it, but wonder how the stuff nowadays that I see in department stores or say TJ Maxx compares
If you found Absolue too strong/animalic did you try Cologne Pour Le Soir? Its still noticeably spiced honey with the animalic note turned way down to 4 from 10.

love your screen name. Yes, i tried the Cologne version and it was too weak of a performer. I love the Absolue, but Wife could not abide it. She wants something cozy/sweet with some interesting notes, she has Byredo Seven Veils and 1969 and the 1969 is a spicy vanilla. I have to be careful with leather.
Also, looking at around $110 or so for 100ml/3.4 ounce as a ballpark to spend, so the Xerjoffs and the Killians are going to be above what I want to spend. This one will be something I grab when I dont want CdG 2Man or Antaeus for fall.
Slowdive mentioned earlier by Hiram Green is a great honey scent. So is Gatsby.
FYI: I spray all fragrances on clothing, never on skin.
Others I would have suggested have already been mentioned above but good luck with finding your perfect spiced honey scent.

Dhanal Oudh Nashwah by Rasasi has recently been getting a lot of positive vibes here as a hidden, affordable gem. It's an oriental spicy fragrance with notes of nutmeg, honey and agarwood (oud); middle notes are strawberry leaf and juniper; base notes are leather, amber and cedar. Comme des Garcons Parfum (EdP) - the first one. I suggest that you sample first, but it certainly has honey and various spice notes.

+1 This is a really nice one, and it's easy to wear. It doesn't contain that typical Montale rose/oud combination which dominate many of their scents either, so if you tend to dislike Montale fragrances you may still like this one. Fragrancenet occasionally carries it at a great price too, I got my 100ml bottle for about $58 a year or two ago.
Another great honey scent is one with a very similar name: Floris Honey Oud This one reminds me a lot of Envol but with a bigger more vibrant and vivid honey note.The honey in this one might be the best honey note I've encountered, as it's so clear and vivid and bright, a balanced mix of the light and dark qualities of honey.
Have you tried Lapidus pour Homme?
I'm wearing Lanvin Avant Garde right now and noticed it has something honey-like in it. Supposedly it contains a beewax note! Of course, I have to mention a designer "cliche" when it comes to the honey note and that'd be Mugler A*Men Pure Havane.
reading up on Honey Oud. Not wanting to venture into rose and maybe just a tad into Oud. I guess, what I am after is a sweet sort of scent with some spicy and booziness maybe.. Not a rose and oud scent and not a vanilla and sandlewood scent. I have Montale Red Vetiver and TF Grey Vetiver and CdG 2Man for some incense and vetiver for early fall. Antaeus gets me my floral creaminess.
read this review on Montale Honey Aoud: Sweetened oud burst. Honey, almost a tobacco note hiding here. Powdery iris note. Patchouli and leather - gentle but, present. A pop of cinnamon. The oud here isn't long-lasting nor is it overly assertive. It was only a quick blast. Later, vanilla and amber take over. Still a hint of iris and a touch of honey. I smell Tiare flower here. I dont do leather well, but a little, maybe okay Powder iris? Makes me think of Dior Homme. Patchouli and honey, my ears perk up and lighten that with some vanilla, and a touch of cinnamon, intrigues me.
Also might try Grand Soir. There is a little sweetness there.
