The original with the touch of a woman (aka more sexy).
I can imagine what the conversation was between Cresp and Coppermann: less sugar more sexy. Cresp agrees.
The result is just that: less sugar and more warmth, revealing a perfect daytime fall jus. The berries are still present, just not 'sugared' as before. The rum ties is firmly to fall by bringing the warmth. The absinthe is the bridge.
